Vegan Carrot Cake Cookies
No filters here people. These are just pure, awesome, cookies.
Makes about 55 servings
Around 30 calories per cookie
-1 1/2 cups oatmeal (choose whichever you like) mine was regular rolled.
-one very ripe banana.
-6 large carrots (they very in size, so play around!)
-1 1/2 cups chopped pineapple (fresh or canned is fine.If canned, drain,rinse & dry VERY well!)
-fresh ginger root. About the size of your thumb (or less, but I LOVE the taste of ginger. So go to your preference)
-4 heaping tablespoons quality, raw coconut butter.
-about one cup unsweetened coconut flakes.
-the zest of HALF a large lemon. Or, the zest of one small one.
-2 tablespoons vanilla extract.
-1/2 teaspoon sea salt.( start with as little salt as possible, just a pinch, slowly add to your own taste preference)
-cinnamon to taste. I like mine spicy, so I did about half a teaspoon or more…probably more!
In a processor, mix oatmeal until fine. Should be the texture of a thick whole wheat flour. Set aside.
Process the carrots until finely chopped. Think the size of rice.
Remove carrots and process the ginger root until VERY finely chopped. Combine carrots,oats,ginger,zest.
At this point I mixed in the coconut butter with the “dry ingredients” to make sure it was fully incorporated.
Blend the banana in processor until completely liquid and smooth. Mix all ingredients together. I added the cinnamon and salt last so I could more easily control the flavor. At this point, fold in the coconut flakes and pineapple. Stir this well enough so that it really forms the texture of a cookie dough. Not too wet, but sticky enough that you can roll it!!
Use a tablespoon to scoop equal amounts of dough. Roll into balls, smoosh flat! I baked mine on parchment paper…
Bake at 350 for around 30 minutes. But watch them! Everyone’s oven is different!
If you want to make the “cold macaroons” also pictured. Simply process some extra coconut flakes into a finer texture. Take the un-cooked dough balls and roll them in the coconut! Freeze them until fully cooled. SO simple!…
Hope you like these!! Again this recipe is so easy to play with. Feel free to taste it as you go along, add more or less of the spices and have some fun! If you feel like it needs to be sweeter add some agave! Because of MY diet, I don’t need the extra sweetness..but hey! these are your cookies so YOU can do anything you want!
Next time I make these I’m going to add toasted almonds for a crunch!
